Fermented Vegetables: Indian-spiced Cauliflower.
This is also one of our more popular ferments, and here, the humble cauliflower, is the main star.
The inspiration for this ferment comes from a famous Indian dish called Aloo Gobi, which features potatoes and cauliflower nicely seasoned with the whole palette of spices.
Cauliflower is quite a powerhouse among the vegetables. Just a few of it's benefits are listed in this lovely pictorial (from here).
Benefits are great, ad it tastes awesome as a vegetable, so it was no brainer that started fermenting this vegetable.
To make this ferment, we start with these beauties:
As you can see, we save the young and tender leaves. We also use some of carrots.
We shred those leaves in the food processor:
And also the cauliflower, to which we add the unrefined grey Atlantic salt:
And a little bit of this:
Plus a touch of magic:
Finally all things are in place:
Now it's time to get a bit physical in order to draw out some juices:
And it's time to put some pressure on:
The next day, our mixture looks like this.
Now, it's ready for our stone fermenters and the some glass jars:

And now, like with all of our other ferments, we let them sit undisturbed for couple of months so that all the goodies have time to reach their full potency.
And by all the goodies we mean the lactic acid bacteria, beneficial enzymes, vitamins and organic acids.
When the time comes, our Cauliflower gets transferred into our retail jars:
And now, it's ready for retail.

Cauliflower is also available in two different sizes: 410 gr and 175 gr.
Here's a first salad that we have made with it.
Greens, Basmati Rice, Green Chickpeas, Tomatoes, Cucumbers, Avocado, Olive Oil and Grilled Pumpkin Seed Sourdough Bread.
And here's another one: with Millet, Beets, Leeks, Avocado and Tahini.
